Why are people so uneducated when it comes to food intake?

There are people desparately trying to shift pounds on super low calorie diets restricting entire food groups or at the opposite end of the spectrum, consuming vast amounts of calories mostly from refined sugars and trans fats. What is so difficult about eating a health varied diet? Why such extremes? I don't get it.
